Food Allergies at a Remote Panama Eco Lodge: What to Ask Before You Book
When every meal is included and the nearest supermarket is a boat ride away, dietary needs are not a detail. Here is what Casa Cayuco says about its kitchen, allergies and special diets, and the questions we would ask before paying a deposit.

We are not doctors or dietitians, and nothing here is medical advice. What we can do is read the lodge’s published information carefully and turn it into questions you can put to the kitchen. If you or a family member has a serious allergy, contact Casa Cayuco directly and get the answers in writing before you book.
Food allergies at a remote Panama eco lodge need planning, and Casa Cayuco says it accommodates allergies and diets, though its kitchen uses nuts and gluten, so recipes can be adapted rather than the kitchen being free of them. Meals are included, predominantly plant-based with fresh fish. For serious allergies, ask in writing before you pay. Book through our link and the code HungryTravelPanama gives you 4% off.

What the lodge says about allergies and diets
According to Casa Cayuco’s pages, allergies and diets are accommodated. The same pages are honest that the kitchen uses nuts and gluten and that recipes can be adapted to suit guests. That is a very different statement from “allergen-free kitchen”, and it is the right one to read carefully. If your child has a peanut allergy, or you have coeliac disease, cross-contact is the issue, and you need to talk to the lodge about how the kitchen handles it. The lodge’s pages do not describe procedures for cross-contact, so ask.
The lodge also asks for dietary needs in advance and sends a pre-arrival form to guests, which is the natural place to list them.
What the food is like
Cuisine is predominantly plant-based plus fresh fish caught by local fishermen on hand lines and brought to the dock by cayuco every evening. Dishes range from traditional Panamanian to global. Coconut milk, nut butters and juices are made in-house. Meals are a chef’s-choice breakfast, lunch and a three-course dinner, with an afternoon snack brought to wherever you are. Ingredients come from the property and the region: coconuts from the property, coconut oil from Salt Creek, cacao from the village, chocolate from Green Acres Chocolate Farm, organic greens from Kakao Culture Organics in Boquete, Finca Panda coffee and limes from Bluff Beach.

Because nut butters and nut-based items are part of the cuisine, nut allergies deserve extra attention. See our food guide and plant-based travel guide.
Questions to ask before you book
- Which allergens are used in the kitchen every day, and how are allergy meals prepared and kept separate?
- Can you cook for a severe nut, shellfish or gluten allergy, or is cross-contact a risk?
- Can the kitchen prepare a coeliac-safe or gluten-free meal for every course?
- For vegans, vegetarians and halal or kosher diets, what is realistically possible?
- What do you do about snacks and drinks for guests with allergies?
- Is there emergency medical help nearby, and how long does it take to reach it?
Write down the answers and keep them with your booking confirmation. The lodge is 30–35 minutes by speedboat from Bocas Town, so it is not a place to improvise around a serious allergy.
Practical steps for families with allergic children
If your child has a food allergy, remember that the lodge accepts guests aged five and over, kid-friendly meals are available on request and meals are included, which means you are fully reliant on the kitchen for most of your food. Pack your own emergency medication and a doctor’s letter, plus a few safe snacks from home. Carry medicine in hand luggage, not checked bags, and keep it dry on the boat. Tell the guides about any allergy before excursions, since a half-day trip may not have a kitchen nearby. Our Panama with kids guide covers more family planning.

Vegan, vegetarian and plant-based guests
If your diet is a choice rather than a medical need, you are in a good place. The cuisine is predominantly plant-based, with fish as the main animal protein, and the kitchen makes its own coconut milk, nut butters and juices. Tell the lodge in advance if you are vegan so that fish dishes can be replaced and so that desserts and sauces are checked. The lodge’s pages do not detail every dish, so ask about eggs, dairy and honey. Our plant-based travel guide has more on this.

Drinks, water and the bar
Beverages are not included. The lodge has a full bar with well and premium liquors, organic, biodynamic and natural wines from Argentina and Chile and Panamanian beers; outside alcohol is not allowed. The lodge harvests and purifies rainwater for the whole property, and we wrote more in can you drink the water. If you have a drink-related allergy or sensitivity, ask about ingredients, particularly in house-made juices and cocktails.
Who this is not right for
If you have a severe allergy where any cross-contact is dangerous, and the lodge cannot give you a written assurance you are comfortable with, do not book. If you need a rigorous gluten-free kitchen, this is not it. If you want a menu you choose from, note that meals are chef’s choice. And note the age limit of five and over, the three-night minimum and the remote location. See our Where to stay in Panama page for other options.
Which room to choose if food is a concern
Room choice does not change the kitchen, but it can change your set-up. Estrella De Mar Tropical Beachfront Villa4% off · HungryTravelPanama has a kitchen and dining area, which can be useful if you bring safe snacks and need to store them in a fridge; check with the lodge what is available. How a day of meals runs, and where allergies fit in
Knowing the rhythm of meals helps you see where an allergy needs attention. The day begins with locally grown small-batch coffee and tea, followed by a chef’s-choice breakfast. Lunch is also chef’s choice, an afternoon snack is brought to wherever you are, and dinner is three courses at communal tables or at the big table on the dock. For special occasions the lodge can arrange a private meal on your porch or at the end of the dock. With so many shared tables and a single kitchen, the chance of mixing is higher than in a restaurant where you choose a dish from a printed menu.
That is why we would put every allergy and dietary need on the pre-arrival form, repeat it to the staff on arrival and remind the server at your first dinner. Do not assume that the afternoon snack, a dessert or a welcome drink has been checked unless you have been told so. A good lodge will be glad you asked, and we would be wary of any that was not.
Finally, remember that excursions often include a picnic or a snack away from the lodge. Ask the guides what is being packed, and bring your own safe food and medication. The lodge asks for no outside alcohol, but its pages do not describe a rule about outside food, so ask first.

Our Honest Final Word
A remote lodge with all meals included can be a joy for most diets, and a serious risk for some. The only way to know which you are is to ask, in writing, and to listen carefully to the answer. We chose to partner with Casa Cayuco partly because its food is excellent on paper, but your safety is not something we can promise.
