You can do a perfect pan-fry on a gas stove. This is what we use 90% of the time because it&#8217;s faster, more reliable, and always legal even during fire bans.<\/li>\n<li><strong>Open fire for fish:<\/strong> requires dry conditions, collected wood (or brought charcoal), time to build and wait for coals. A fire is much harder to control for fine cooking \u2014 you can&#8217;t reduce heat quickly. Best for whole fish cooked on a grill grate over coals, not for pan-frying.
